What are Garlic Scapes?

For those of you growing hardneck garlic, it’s time to cut the scapes. Garlic scapes are those curling stalks that look like they are going to burst into flower. Actually, they form small bulbils that could be planted and grown into garlic bulbs. That takes a few years. Instead, you could enjoy them now, in all kinds of recipes, and let the garlic plant put its energy back into growing this year’s bulb.
