Lettuce – Talk about Fresh
What other vegetable do you always eat fresh and uncooked? There’s a whole world of salad greens out there and they are very simple to grow and even easier to enjoy. Lettuce is also one of the earliest vegetables you can plant. The seed will not germinate if the ground is excessively cold and damp, but young seedlings can be put out before the last frost, as long as you protect them with a row cover in the evening. I’ve even grown lettuce in pots, under lights, and then moved it outdoors during cool spring days. Give growing lettuce a try. That pale, green ball in the grocery store is just the tip of the iceberg.
